Does anyone know the answer to this... If I order a bag online (I have my eye on the Victoria II 35) and get it delivered to a store for pick up, does it get added onto my profile at the store? Or is it just completely separate and I have to sort of build my profile at the store separately?
Online orders placed by yourself via their website are separate from your store profiles.

Often times the stores get the same items as the website. You can contact your SA to source the item for you and buy it through your store profile that way.Thank you!

Just remember that the online store is a different arm of the business from the walk-in shops.
What is available online reflects what might be available to walk-in shops, but the inventory is not necessarily the same.
It is certainly a good idea to contact an SA or ASM or SM in advance of a visit to a store with any request you might have - even if you have not seen that particular variant on Hermes.com. They have access to the wider walk-in inventory and, in my experience,have been willing to source from elsewhere.

Indeed, at RE they said I can drop in, they can order online for me, have it delivered to the store - as others have said I think if they order, it will be added to your store profile.

RE is indeed a lovely place to go: small, beautifully formed, with very welcoming and helpful SAs & SM.
I may pop there this week as in the area for a meeting. Last time I went RE was in the middle of renovation.
It's literally my corner shop. I have to stop myself from going in every week during my post lunch walks.

Shout out to the service and care at Bond St. They have always been kind and attentive and the SAs have always kept their word to me. Issues have been resolved beyond my expectations and the craftslady is a sweetie. They may have new bag collection policies, but hey no worries. I have family and friends who are happy to offer help. My Christmas present, bought at 2018 price, brought home by DH to me in Jan 2019.
