I'm hoping to find a neutral color Evelyne TPM next month when I go to Europe. Do all Hermes stores require an appointment in Europe for this item, or is this specific to the Paris stores? I'll be in Paris, Milan, Rome, and Amsterdam. Any insight you can give would be much appreciated! TIA!

Just try every shop you can visit. Make sure you have time, don't ruin your trip to those beautiful cities just to hunt for 1 bag. The only shop I want to spend the whole day to wait and enjoy would be FSH. I never been to the shop in Rome so I cannot say much. Tried many times to get Evelyne in Paris but never successful (strangely enough I always got my quota bags there), and then I got my Evelyne in Amsterdam ;)
 
Went to sevres at 9:15 AM and was 2nd in line. By 10:30, there were almost 20 people waiting. Nobody got offered any quota bags, the SA are pretty cold and do not bother striking up a conversation with you. I knew it was game over when just straight up as “what are you looking for”

Yeah that was my experience at George V, very direct and I didn't see anyone get quota bags.
 
Also I watched another SA lie to a customers face about having no C in stock lol. Because I was offered a choice of 4 different colors of C (my SA was scrolling on her phone to see the availability). The other customer was buying for a friend/family which I think is a major turn off for any SA there. They showed her a Lindy 30 and Herbag and she took pictures to send to the other person.

Therefore when an SA says there’s no availability of stock, it just means there’s no availability for you.

The SA makes a lot of judgment calls looking at you. She asked to see my husbands purchase profile, and she saw I brought back the bag he got last time. She didn’t bring out the C in the same color as the K I was carrying because she said I probably would turn it down. I’m guessing my first choice k25 or mini kelly was not offered because I purchased kelly last time and also my larger frame/size. They really assess how likely you’re going to resell/flip the bag vs using it.
 
I GOT AN APPOINTMENT! Asking FSH about cancellations really does work! I think the hostess took pity on me from asking every day. Ended up getting a rose tyrien ostrich c24 and a black box bearn wallet. More details to come but I am so happy right now.
Ohhh I have always wanted a c in ostrich RT! Pls post photos when you can and share the price if you don’t mind. Congrats!

I'm headed to Paris in a few months and I'm only interested in a Birkin 30 in a neutral colour with GHW. I have never shopped the brand before and honestly quite put off by the whole drama behind it however I do really love the bag. Now I will try to get an appointment at FSH, what is the chance that I'll be "offered" a B30 without any prior purchase history? I live in Australia and I've never set foot in a Hermes store simply because I don't like to be treated like my custom is a favour to them however I am now ready to buy my first Birkin.

There is always a chance to get what you want. Whether it is likely or not I don't believe anyone can predict. Hearing your question though, I suggest you just go through a trusted reseller. It doesn't seem you care for the rest of the Hermes brand too much, and with the chance of success in Paris being quite random, I would say save the time, trouble, and risk of disappointment and just wait for the exact bag you want on the after market. It will turn up there eventually.
