The best way is to find a new SA you like and want to work with and be honest and upfront about what you want. But don't be crazy ie. Purseonfleek.

My best starting advice would be to go to the boutique find a newish SA (6 months or less) and be honest with them about the bag you want and the time frame you want. Ask them for their email/phone to communicate with them. Every SA has a preferred method on contact and if you ask for this at the first meeting you can build a relationship quicker.
Thank you for sharing your tips. I’m starting my H journey with baby steps. I forgot to ask for the SA details when I was in the store in mid January. She was a lovely SA too and updated my online profile and apparently noted all the little items wanted ie the sushi tray, calvi duo and a picotin 18. I’ll have to start again and find a proper SA. I have purchased a few items online and a pair of Oran’s. Looks like I need to go in store, try and find a SA who is new and try to buy something I want to start the relationship.
 
If your starting your H journey and wanting a bag don't buy online. Buy in store. Email/phone your SA to get them to put items aside for you or order them in.

I cannot stress enough on not buying online unless its a bag.

I can’t thank you enough for sharing your tips. I have been stalking the website the last few weeks. I can’t believe there were 3 picotin 18s online a few weeks ago. One was the exact combination I wanted. Alas, I’m not quick enough

If want a new SA when you go to the store just say something like "I'm just starting my H journey I'd like to work with someone new" or something similar. We get all sorts of requests for SA'S such as nationality, sexuality, gender etc.
 
Also, if you don't like the SA don't buy until you find an SA that you like. Depending on your spend it could take you a few years to reach $20,000 and you want to work with someone you like.
Oh, that happened before COVID when I went into the Collins Street store. The SA was not interested to take my name down for a Picotin 18 and showed me a GP instead. I did ask for her card but I did leave extremely frustrated. I popped her card in the bin because I was not feeling valued as a customer. Instead, I shopped from the comfort of my home. I never visited the store again until this year because I now really want a Picotin. I’ll definitely use your tips ☺️
 
How to get a bag at Hermes Australia.

I used to work at Hermes as an SA in Melbourne until recently so I know exactly how to get a bag.

Pick one SA. Preferably someone new to the store because SA's who have been wth the company for awhile have a solid client list and will preference them first.

Birkin, Kelly, Mini Kelly, Constance $20,000 spend in one store with one SA.

Picotin, Roulis, Verrou, Bolide, Evelyn, Mini Evelyn $3,000 with one SA.

There are less bags and less stock because of COVID-19.

In this case pick a new SA at maybe a different store. Preferably someone new. Your SA is making you spend to get more commission. $20,000 with one SA is the the rule of thumb. $20,000 includes every category except bags.

You have no obligation to stay with an SA. You will not be punished for changing SA.

I strongly believe you are being taken advantage of by your SA. I have had clients who have gotten a bag then we started again with $20000 in all categories (except bags) for the next bag. Some of my former co-workers would do this to their long-standing clients to get more commission. We don't get commission on bags and any bags we sell are not added to our sales.

At $30,000 - $40,000 (rtw/jewellery only) I would have gotten you two quota bags or an exotic skin bag/clutch. I really believe you should change to a different SA.
