Well, having tried only one company (so far), I’m quite fond of Portland Leather Goods and the Mini Crossbody in particular. I just ordered a Mini Tote from KMM & Co in Natural Veg Tanned (I’ve been looking for vachetta-type leather for years), pictured. I‘ve looked at Go Forth Goods, but don’t care of the style (even though it’s similar, but I just don’t like the hardware options. Off to check out the other companies you’ve listed…

I haven't added anything to my collection in a while, but I hope to order from Couper et Coudre on Etsy at some point. Their bags are hand-stitched and they use reclaimed/recycled leather for some of their designs, which is something I'm very passionate about.

 
I'm also learning about fish leather so I'm hoping to find brands that use this to make bags.
I'm a big fan of fish leather but it's very difficult to get your hands on bags unless you happen to be in Brazil (where they are common).

Alexander Wang has made some bags and wallets with it in the past, so you may find some on the pre-loved market. Also Piper&Skye is a new brand that is marketing heavily their fish leather bags (but I think they're partly leather, with fish leather trims and flaps- not sure, you'd have to check).

Laurel Dasso who had an Etsy shop also can make you a custom fish leather bag. However, please note that in recent years, people have not been receiving bags they have paid for, so I can't say I recommend her in good conscience. YMMV.

I only purchased one bag from Cathy Roels who is the owner of this company and makes the bags herself. Mine is perfectly made and was very reasonably priced. She has a few on her website but probably is more into crafting bespoke bags now.

My bag was purchased on Etsy but it looks like she is no longer selling there.
