They are likely just not available yet. Coach will often tell you new items are "sold out" because the system shows zero and what it really means is they are not available yet. They have told me that several times on newer bags. Hopefully that is the case for the bag you want

Hi, thanks for the encouragement! No idea if that's the case with dahlia/oxblood, but the other colors were certainly showing availability for purchase back in the fall. I did purchase the saddle/carmine back at the last PCE, so I know fog/adobe was one of the hues in the original release. In fact, the saddle and black/oxblood still can be ordered, and it makes no sense that Coach would withhold certain colors of one style and not others. Going to see what really happens at the Feb 09 launch

Bottom line is they ARE crazy! I am willing to bet money I see at least one saddle bag on the factory site in a year from now.... When will they learn?
Beautiful colour! I love the suede interior too but I wonder if it will hold up well over time?
I agree. I'm not sure I'll pay $695, but I love that it's pebble leather and has a suede inside. I also like the new Outlaw Satchel with the suede inside. The small Outlaw is $595. I posted pictures of that one as well as the Dinky bag and the Ace in pebble leather on the Any info on the next floor set forum. It seems that Coach is slowly bringing up their prices.
I love the color. I believe it's called mineral. It will also come in oxblood, chalk, camel and black, and the JAX rep told me it is slated to be released late February and early March.
