Green is a great neutral. I think I read a while ago by @ladysarah (I hope I'm quoting the right person) that green is the color of the stem and leaves of all the different lovely flowers in nature, so it just makes sense that it goes with everything. My paraphrasing probably isn't doing justice to the original statement, but it totally makes sense!
