^^ Yes, that's right, with a short "ee" sound between the S and the EL. (more like SISTER, less like SEA).

I cannot tell you why we have to hear the S in Hermes but it is true that most of the S at the end of our words are not pronounced. That is why French is a difficult language and to be knowledgeable about how to write a spoken word, you have to read a lot. It is true.

Just to teach you ^^ Hermès is a family name so we have to pronounce the S, but for the example you wrote: "j'entends" wich is a verb conjugate, first person, we have to put an S but do not pronouce it. There is nothing to understand, just learn
So don't take care of the S in words, too complicated to explain...
