Origins of Leathers ?

This may be a silly question, but on seeing the weights of all the different 35 birkins, just wondering if anyone knows how the leathers originate.

I believe clemence is 'baby bull' and obviously the exotics are self-explanatory, chevre - goat. But what about the others ?
