I would choose my 35 black clemence birkin as it has probably gotten the most use out of all my bags. It has been well loved and has gotten floppy over the years, but I love the fact that I don’t need to baby her.

Probably black barenia 35cm or 40cm with brushed gold hardware (I don’t own it, and have never seen it, but if I could own only one....)

My gold B30 with gold hardware. Togo leather. Makes me smile every time I look at it
B35 Noir, PHW. Mine is Togo but Clemence is my favorite H leather.
Barenia 35 that I imprinted my nose on it.

It'll be either a black or gold B30 for me. I own a black B30 but I know I need another B25 for other occasions and hope I'll get a gold one. Hence, I think it'll be 2 Birkins to rule them all for me 
Either my Box Chocolate Birkin 35 gold H/W or my Barenia 35 but with gold H/W (mine has pall H/W) Very difficult to choose , although Barenia is heavy, so since I'm not a young chicken anymore probably Box would be more sensible.
If funds were no issue I would choose a brown Matte croc (either Nilo or Alligator) 35 with gold H/W. I much prefer gold HW on classic colours.

I would choose B30 Noir in Togo with GHW. It goes with everything, and is not fussy. I always worry about color transfer and dirt on my leather handbags, but I worry much less with a black bag.
Fauve is what is with me, but I would not hesitate to add other colors such as olive, black or ebene. I don’t know why H doesn’t produce barenia as much as in the past, not that it ever was compared to say Epsom.
I am told there is a shortage of Barenia as it is very difficult to produce the Heritage smooth version, to the high standard required by Hermes, as it needs large pieces of perfect, unblemished hides.
