You mentioned in an earlier post that you are a student? If you put even half as much energy and time into studying your chosen subject as you seem to in worrying what your SA may or may not be thinking I am sure you will do very well in your chosen subject.
I work in Luxury sales across multiple brands and the past month has been manic for all of us, with staff isolating due to the new variant of the virus (and it appears that this is now a global issue) and of course Christmas holidays, New season stock arriving etc etc.
Working in sales is a juggling act..You are not your SA's only client therefore for all the reasons mentioned in my previous paragraph I feel you are being somewhat unfair being upset that he or she has not reached out to you a day after you messaged them or indeed that they have not begun to source all the items on your list.
You seem obsessed with spend...speaking as someone who works in sales my clients who aren't big spenders but are loyal (and by loyal I dont mean they visit every week, it can be every few months or even only once a season ) are just as valued and important as those who spend more.....I am sure that your SA (and indeed most Hermes SA) feels the same.

personally find it insulting to your sales associate that you are filled with the suspicion that he is just selling to you with commission in mind.
You don't trust him and he no doubt as a sales professional he senses that.
Its not enjoyable selling to a client who is filled with mis-trust and suspicion.
If you want to buy SLG and he guides you to another category he may just be following his management directive to introduce new clients to other categories and share his knowledge-If you dont want to buy something from one of those categories be honest-buy your calvi or whatever.
You are worrying far too much than is healthy about what the SA may or may not be thinking of you.
