which leather is the best for a birkin bag?

That's a very personal decision as everyone loves different leathers.
Maybe you want to have a look at the reference thread, there you can find a lot of info about different leathers ;).
Also, do you want a leather that keeps it's shape or a leather that becomes a bit floppy overtime?

I like both, Kelly AND Birkin. Do you prefer an elegant lady like bag with shoulderstrap or do you like a handheld bag with the look of a tote?
When I got my first H. bag (a Kelly), I thought is was going to be my only one but I was so wrong. Enued up with both, Kelly and Birkin.

No, you can also go for a structured Birkin if you like Birkin better. Clemence (also a Clemence Kelly) will become slouchy overtime. Togo keeps its shape better (especially when you stuff the bag inside when you don't use it) but can become floppy as well. Fjord is nice too but this leather can also slouch a bit.
Vache Liegee keeps it's shape better IMO and then you have Box leather but not everyone is a fan of Box leather as it is quite delicate.

Will fjord slouch over time?
 
I don't own any Fjord bag myself but from what I've heard and read, it can slouch a bit over time. But not as much as Clemence does.
Maybe Fjord owners can tell you more about this ;).
Thanks Chanel- I know it wouldn't be as much as clemence but would like it to "evolve". I want a 31 bolide and wonder if the style and size would tend to soften even less?
 
Annie, my Fjord 30cm Birkin is over 10 yrs old, and while it's definitely not smooshy and slouchy, it has definitely relaxed a bit, especially on the sides. I'm not sure how that translates to a Bolide since the construction may be a little different. I imagine that a Fjord Bolide would soften a bit over time, but I doubt if it would become as slouchy as Clemence unless you sat on it a few times. And even then, maybe not!
