The Hermes model is the top of the line so it automatically comes with all of the bells and whistles, including cellular. You don’t need the Hermes Apple Watch in order to use the Hermes Apple Watch bands though; they will work with any Apple Watch and can be purchased separately.So I've tried looking it up via google search if an Apple watch can be used without owning an iPhone or without having one in proximity. Most of the answers seem to be from hard core Apple fans who are deadset against the idea and don't really seem to answer the question.
I know my reasons for considering the Apple watch are ridiculous... Simply, I want it as a sporty accessory to match a handbag. I know it's silly and without an iPhone the features are limited, which doesn't bother me. I'll probably consider the model 10 Hermes model. Is it possible to purchase a non-cellular version of the Hermes Apple watch?
I won't be using it for calls, messages, music, etc. Simply for telling the time and well, to match my bag. Things like measuring steps, heart rate etc are a bonus if possible but not required. I figure I can be honest in this forum without being ridiculed! 😅 I have 2 Samsung Android phones and I don't like the Samsung smart watches.
Does anyone do this? I haven't considered if I get a cheap iPhone to manage it or just have my partner set me up as a 'family member' from his work issued phone. If I've made an incorrect assumption and the latter isn't practical, let me know.

That's correct and the watch also requires an iPhone for settings, software updates, etc., as well as an Apple ID. I’m fairly certain that in order to do the initial watch setup, you need the Apple Watch app on an iPhone and without it you won’t be able to startup the watch. When you power the watch on for the first time, it has a QR code type thing taking up the entire screen which you scan with your iPhone to pair them. This then triggers the phone to sync to the watch and update the watch’s software to start configuring it for your usage. Without an iPhone, you won’t be able to get past this QR code screen. At a minimum you’d need to at least use a family member’s phone. Alternatively, if you just want a watch with matching leather bands, have you considered a normal Hermes watch? Many have leather bands that you can order in practically any color.

It's nice to be able to play with watch faces and features using a phone. Hermes Apple Watch came in black at one point but no longer does. There was a single full black leather black hardware band to go with the black Hermes watch that year. Nothing from series 10 is black metal, however the website does still sell the all black band, though I’m guessing it is old stock selling slowly. Double tour version. Bordeaux black hardware.Hi, do I understand correctly that H leather bands for AW do not exist in black hardware? Not even for previous series?
And Hermes version of AW does not come in black either, right?

Even in the regular line up, the GPS only models just come in Aluminum, not the more expensive treatments such as stainless or titanium

I do have an old iPhone (forgot). Used them for years mainly due to work, but having to carry around a 3rd phone is not something I'm wanting to do, hence I was considering the 'family' option.
