All these people are acting like it is most proper it get the watch or the bracelet.
I say get which ever you want the most!
The opinion of others doesn't really matter.

Congrats on your upcoming wedding I hope your marriage is filled with happiness (:

thank you all for the suggestions ;)
i REALLY want a rolex too, but I have 3 watches already: ballon bleu mixed gold and silver and the tank and the chanel J12...so I don't know if I need another watch, especially given I don't even wear my existing ones? what do you think?

If you are not wearing what you have, makes little sense to be gifted another watch. I say let them decide which gift to give you.
I agree with everyone, very generous gift.

What a wonderful decision you need to make!
Any of the three would be wonderful but I think the watch would be a more 'appropriate' gift from your in laws.

The Cartier love, I feel, should be a gift from your husband

The Birkin, a gift to yourself.

Whatever you choose, congratulations and may you both be blessed with a long and happy marriage.

My mother in law gave me a washing machine 😳

If you haven't already made a decision, I'll add my two cents. Since you already have a fine collection of watches, adding another to those you rarely wear wouldn't be my choice. A handbag would be something I would expect to receive for a birthday or holiday gift. The Love bracelet seems appropriate considering the occasion is your wedding and Love should be celebrated. Who says a Love bracelet must come from your husband? I've known it to be given by children as a Mother's Day gift as well as for a special birthday. And wouldn't this Love bracelet be special given by your in-laws on your wedding day; just the start of a collection to be added to by your husband on an anniversary? We all know they look better stacked, anyway! A beautiful, unusual, meaningful way to celebrate your special day. Best of luck to you and your honey.
