Tiffany I colour diamonds?

Absolutely! A well cut I is going to face up very white, especially when set. Unless it's right next to a DEF unset you're almost certainly not going to see the difference face up. I wear an H (not from Tiffany) and it's VERY white, esp in the setting, and I have a very open setting.

Unless it's very important to you to have and pay for the higher color, it's not worth the premium. If you plan to trade it back into Tiffany's for their upgrade policy (assuming this is an eligible purchase or you live in an area where they offer this service) it's not worth paying for a DEF. Higher color might not help even on the secondary market, as many who are buying via the secondary market still aren't willing to pay that premium.

i don't understand why you'd buy go to tiffany's to buy an I colored diamond?

if you cared about size over clarity, why not just go to BlueNile - i'm sure you can get an even bigger sized diamond for the same price at the same color and clarity ...

Everyone has different criteria for what is important to them with their diamonds and jewelry. Some people have a mental block about buying below a certain grade, they can't wrap their heads around the perceived imperfection of warmth. Others are very color sensitive and can see the warmth, either literally or "figuratively". There are also some cultures where buying anything other than a D FL is not acceptable and if you were to buy an I you would bring a lot of disrespect to your family.

As for pricing, every color grade carries a premium the higher they go, and when you get into the D E F range, the premiums are a bigger range between the grades, esp in the D E range. An I will obviously be cheaper than an H, which is cheaper than a G, which is cheaper than an F, and the spread of how cheap is usually pretty "standard" as you go down, about $1k-$1,500 give or take, per color grade other than the highest colors, with Tiffany it will obviously be a bigger jump than $1k-1,500.

An I color stone is still in the near colorless range, and while some people scoff at Tiffany selling them, they're still beautiful. The way I see it, Tiffany selling I color stones is the only way some people can afford a Tiffany ring, or the size of stone they want in the brand. And that gets them into the brand which is good for the brand itself.

You're not really expected to understand. But a few reasons may be that some people want a Tiffany's diamond and ring and not a non-branded diamond and ring. She might be one of them. Or that size isn't as important to some folks. Or that you can at least SEE the I color in person at Tiffany when you're selecting it vs buying on paper from Blue Nile.

You're implying that an I is in some way inferior, whether it's from Tiffany or from Blue Nile and it's not. You're also implying that she's concerned about size and price.

I did try a few other solitaire rings, and none of them made my heart sing. I just loved the well-balanced design of the Tiffany ring and I know that if I settle for something else, I won't be truly satisfied. I know I pay a higher premium, but for me it's not about the diamond itself but the ring as a whole!

I recently upgraded my solitaire e-ring at Tiffany and went with a 2.03 ct I VS2 stone and I love it! It faces up very white and sparkly and I, personally, couldn't detect any color difference even when I compared it to an F (both in the store lighting and in natural lighting by the window). I have received tons of compliments from others on my new ring as well! I wear it paired with my Tiffany 3 mm G VS shared prong full eternity band and both look great together. I previously had a Tiffany G VS1 solitaire, but while doing my upgrade and looking at rings with different specs, I saw no reason to pay the premium for a higher color grade as I was very happy with the whiteness and sparkliness of the I stones that I saw. As long as the stone has an excellent cut, an I will face up very white and sparkly.

This is why seeing the stones in person is very important in determining your personal preferences for carat weight, color, clarity, etc.

I bought an I colored stone from Tiffany because it's a freakin gorgeous ring, that's why! :p

If the OP wanted to buy a loose diamond, then that might be a different story, but she is not. She is looking to buy a piece of jewelry (this is where design and craftsmanship come into play). Just as we all have a different set of preferences/standards for diamond specs, we all, too, have a different preferences/standards for design and craftsmanship.
