Food Please save me from having to hand-mince ginger.

It's getting cold early here so I want to make gingerbread with fresh minced ginger. I have a terrific low-fat recipe.

But I hate chopping and mincing. I've tried the food processor but the ginger pulp just makes a mess. Should I try peeling the ginger, then freezing it, then putting it through the food processor? Would that work?

In my old town, I could buy jars of minced fresh ginger for cooking. That was great.

Or might you know an online place where I could buy minced fresh ginger?

Take pity on me, please!
 
LOL...I know the feeling!!! I use it in stir frys all the time and its a pain to mince...then I found it minced!! YES!! In the produce section with all the fresh herbs there is a tube with it fresh and minced and its wonderful!!! I will look for the brand. BRB
 
If you are in Canada there are frozen cubes of many herbs and spices called Toppits. You can go on Toppits.com to find out where to buy them. They have ginger and garlic amongst others. I love them and can't survive without them now!
