It's getting cold early here so I want to make gingerbread with fresh minced ginger. I have a terrific low-fat recipe. But I hate chopping and mincing. I've tried the food processor but the ginger pulp just makes a mess. Should I try peeling the ginger, then freezing it, then putting it through the food processor? Would that work? In my old town, I could buy jars of minced fresh ginger for cooking. That was great. Or might you know an online place where I could buy minced fresh ginger? Take pity on me, please!
