I like her look as a red head. I don’t know why she choose blond.
Because when your natural hair is now gray or white and you color it, red hair shows your roots much faster. Red dye also fades much faster than any other color so it's harder to maintain. I have several friends who were natural redheads and they are all now blondes. All look better with red hair as blonde washes a lot of people out but it's the easier choice in the end.

I like that red on her better than her original red back in the day which if I recall correctly was more strawberry blonde?
Yes, red is harder to maintain with grey hair than blonde. But she has plenty of access to professional hair stylists so it's just a matter of her sitting still for an hour or so.
I color my hair auburn and it's a PITA with the roots growing so quickly but I don't think I could pull off blonde hair. Almost might as well go grey.
 
Red hair also fades as you age. Mine is much lighter now than it was in my twenties.
I was never a bright redhead like Nicole. I had medium-light auburn hair. My hair has not gone gray or white (I'm 63), it keeps getting darker auburn as I get older. I am taking after my father whose auburn hair did the same. He died at 83 with no gray in sight (on his scalp, the hair in his beard or on his chest was white/gray). All my grandparents had gray hair, I have no idea why my dad and I would be the exception. It's not that I'm complaining, it's just a little odd.

The pictures of Nicole with the red hair, I think she is wearing a wig. Her own hair (when I've seen it which may not be often) is dry looking and sparse. I think she either supplements her hair with extensions or wears really good wigs, especially for magazine features or when performing.

That’s amazing! The joy of genetics. I wonder if it is more related to orange based gingers. I’m sure you can’t state absolutes in absolution but there are four gingers in my office and, over the years, we have all lightened up. Not as drastically as Nicole, (well one guy did but not intentionally) but enough that I googled it and felt better by what I read that it was common.
