I agree that Roots bags are very minimalist.

My first suggestion would definitely be Jil Sander. I have "View Bag", leather is great and whenever I wear it I take lots of compliment.

To keep it on a budget you can check this brand too, Mlouye ( www.mlouye.com ). I saw this brand mentioned in someone's blog post. They are similar to Everlane/Cuyana, but with more unique designs.
I tried board searching but didn't see any mentions of them yet.
I took a risk and ordered their small convertible flap bag in pic, waiting fingers crossed. Also loveeee origami inspired bag!

Depending on your budget and tastes: Longchamp, Modalu, Furla, Mansur Gavriel. There are a lot of choices. European and Japanese brands are good for simple/minimalist/ logo-free designs.

Wow the convertible flap bag is beautiful! I can't find any good reviews of their bags/leather so please share what you find!
