are they both an option right now or are we talking about waiting for one or the other. If we’re waiting I’d take whichever comes first since both are beautiful. Chai is more unique and just as versatile as gold.
I'd choose Chai. I wear a lot of color and Chai is neutral enough to go with everything.
Gold, because I think it can be worn both really elegant and completely casual, just depending on the styling. Personally, I think gold in gold is fantastic.
Gold for me too I think gold is one of the few colours that looks beautiful with both gold and palladium hardware.

I found Chai nice when it came out too but a friend (not very Hermès literate) once said she thought it looked like a fake bag factory’s take on gold, which ruined chai for me

Another vote for Gold! My first Birkin is a 30cm in Gold with gold hardware. It really is a color that works all year around.
