I always tell people that watches are like wine, and other things - buy what YOU love. And if you don't LOVE it, don't buy it.
I would also like to echo "jellyv" 's concern about rose gold as a choice. As a watch collector myself, and with a hubby that professionally reviews watches on line, I honestly feel that rose gold is a current trend and not something that may be on point for the long haul. Platinum and two tone yellow gold Rolexes are a timeless classic that will never go out of fashion.
That being said, rose gold is a GORGEOUS metal, and there's nothing that says "Here comes the Bride" than PINK!!! It's very popular, and you are a young woman living in the best time of her life - her wedding. It's wonderful that you can afford this watch, so I see no issue with a delicate, feminine rose gold Rolex commemorating your wedding day. You'll always be reminded of your wedding when you look at your watch. If down the road you grow tired of your pink Rolex, you can save up for another yellow gold or white gold/platinum Rolex for an Anniversary or other special occasion.

I am turning 50, and Hubby just bought me the 31mm Datejust rolesor in yellow and steel, with the silver dial. It is the watch I have dreamed of my whole life, and kept coming back to when he told me to start looking for a 50th gift. I was going to "settle" for a two tone Tissot or Tudor (which are both GREAT watches), but I just didn't like the lines of them, or their bands. I even went so far as to buy a vintage Pulsar men's quartz that looks like a Rolex, just so I could wear something that was two tone. I'll post that too, for fun.
Now, If I were a young bride, I would probably have picked exactly what you picked!
My hubby turns 50 in 4 years, and he wants a Daytona. Out here in CA you have to be a repeat Rolex customer to even get on a list to buy a Daytona, and then Rolex "chooses" who gets to buy their Daytonas.
Here's my 50th milestone giftand the cheap vintage Pulsar. The shine off the 18k gold on the Rolex is amazing compared to the Pulsar. I love it.

Thanks for the advice, perpetual girl!Orchidlady, I looked at your watch again and like how the size of the 31 mm wears on you. Your wrists look very small. I think the 36 would have been too large. I myself initially thought I wanted the 36mm datejust, but /I found the 31 wears larger than I thought. And that dial is perfect with the two tone rose gold. The rose dial would have been too much I think. You'll be able to wear this with more.
Plus, you can always borrow your fiancé's Daytona. Lots of women wear them, and we can get away with sporty chronohraphs being larger, like 40 mm. That's my hubby's "grail watch", and you can bet that I'll be borrowing THAT one LOL!
Also...I think you need to show your Groom this ring from Tiffany. Might be a nice future gift to go with that lovely new everose Rolex

You are right that I should have been more specific. When I said: it would be "any" 31mm dial with rose gold accents, I meant any current DateJust 31mm dial with rose gold accents.
How do I know this? Because she bought it recently. Since she bought it recently, she can go onto the Rolex website, and filter for any current 31mm Datejust watches, in steel and gold, small size (specifically looking for 31mm and steel/rose gold ones).
Whatever dial comes up in ROSE GOLD and in 31mm she is able to switch to.
In her case, MOP IS available as an option, as there is MOP 31mm with rose gold accents currently listed online and will match her watch.
I've attached the picture of the MOP below.
I know all of this because I also bought a Datejust this year and went through the service center to ask about switching dials. The reference book they showed me shows pictures of dials I am able to choose.
All the dials they showed me in the booklet (pictures attached below) match exactly the same ones on the website if I went ahead and filtered for 36mm Steel Datejust with white gold accents, which is the watch type I own.
If you have an old Rolex the reference numbers might be different depending on how old it is and when you go to an authorized dealer, they will show you specifically what options are available for that specific watch.
Anyhow, you have to go to a store to specifically ask, and they can clarify further what is and isn't an option to your specific watch.
The bottom line is this was information she wasn't aware of before, and now she knows in case she wants to switch it up in the future, since the point of her original post was having trouble choosing a dial, I wanted to make sure she was aware that switching dials is an option.
She didn't know this and know she does, so yay! Mission accomplished of my original post.
In nvie's case, the AD told her that she isn't able to downgrade from diamond markers to less valuable markers.
That wasn't the case for my mother, who has a 36mm diamond dial rose gold Datejust, and wanted to switch to a Roman numeral one, which she was able to and did successfully.
This was in the Middle East, most likely a different region from where nvie checked with an AD, so that may have been a factor. It also may very well depend on your personal relationship with Rolex (whether you are considered a VIP client or not, in my mothers case, she was considered a VIP client).
SO if you go to speak to an AD you may or may not be able to switch depending on your relationship and region with the AD, but it doesn't hurt to ask and see for yourself.
I may not be a expert, but I do consider myself a "knowledgeable person," to quote you.
