I have a medium white classic caviar flap with gold hardware (last of the stamped gold) from 2008 season and it is still incredible. There is not one spot of yellowing. I myself was skeptical but after 13 years it looks good (inside and out). When I store it I do wrap it in archival grade, white tissue paper (the paper is special archival paper which museums store their articles in for preservation and I had to order it from a special distributor). I also store it in its dust bag and never store it sitting out on an open shelf. It is always kept behind the closed doors of my closet which does not have any windows (my closet doors are windowless for fear of sunlight damage). I am not sure how the current season bags will last over the years but I can say, a beautiful white Chanel classic is amazing and it will be the one which I refuse to part with.
