I'm sure that she will work out. Dogs can learn to trust and it sounds like she's really coming around! She's come around to the yorkie too. It'll be fun to watch when she finally realizes that the yorkie won't eat her. Dogs are so funny. Good luck and Bless your heart for taking this sweetie in!
My Swiffer lived in a pet shop for the first six months of his life, then he was purchased by people who pretty much kept him in a crate in their laundry room. His next home was with a family who tried to train him, but he bit their daughter and lost his potty training there so I don't think that they were using very good training techniques.
I have had him since December and he is calm and secure when I am holding him, but he is still a little skittish around outsiders. But he is getting better every day!
