Thanks for posting all the photos. The bullets are nice, and from a distance they could be confused for baguettes. I'm with you though, the bottom emerald with side bags is my absolute first choice! I just can't get away from how elegant it is (is that a photo from HW?)
 
Here's an old photo of my ring: 3.0 center with 0.5 trapezoids. Remember, you can change the entire look of your ring simply by changing the proportions of the center to sides or the length to width of the center stone.

Go with the baguettes. The idea of the Emerald cut is for the diamond to "flash" or "mirror" not a "sparkle". The baguette continues with the "flash" look and a trillian cut, princess, round all sparkle. I say carry over the look of the "flash" of light with baguettes or smaller emerald cuts on either side.
