I kinda feel sad. I don’t have any holy grails anymore. I bought what I dearly wanted and haven’t seen anything else that makes my heart go pitty pat. 
I've been using Natasha classic Q for years. When this bag will die I will buy Polene number one. To me it's the perfect bag!

So perhaps I misstated.I’m thrilled to have what I have. I just love handbags and would be happy to see something exciting come along to make me want to add to my handbag family and give me some new arm candy to play with.
Well... there are three. 
A Chanel classic flap, a Louis Vuitton Sofia Coppola, and a Fendi Peekaboo. I'm so fortunate to be able to say that I have all three of them.

I’ve lusted for and purchased a few ‘HG’ bags that didn’t turn out to be such - a Chanel 226 Reissue and north-south Boy bag come to mind.
These are three HG that did work out:
Fendi Peekaboo in taupey brown
Chanel ‘two tone’ mini flap (I feel like that’s not the right name for this, as it is not two tone, but oh well)
Chanel burgundy coco handle
I have two HGs left, a Coach Winnie in Periwinkle
And a Celine belt bag in this purple… not sure if this photo is of a real Celine or not though, so it’s possible this was not ever a real belt bag color.

DreamyWell... there are three.
The Petite Boite Chapeau…for 5k is kinda too much for me at the moment. But when I’m truly in the position to afford it, I’ll buy this in a heart beat!!!
Hermes Kelly 28 is mine as well. But I share your sentiment: I feel it's too much money for one single handbag. I'll probably end up with one at some point, but the guilt will be too much if I don't sell off some of my existing bags first.
It considered a hard side trunk for LV standard. I love how it lined with leather inside too. And it a elongated checkered pattern inside.
