I admit that I've never seen The Talk and I don't think I've ever seen Sharon interviewed before so I can't comment on whether or not she always comes across that way, but I thought she was a bit odd.
She just seemed "off". I don't know, I can't really put my finger on it. I am a regular Bill watcher so I wasn't expecting hard hitting journalism from him, nor did I think he would be overly critical of her, but it seemed like she started strong and then she became more befuddled towards the end.
I also have to say that I don't follow her so I'm unaware of other incidences with her, like the one about the uninvited guest at her anniversary party, or the accusations of racial and/or gay slurs.
I do think that Sheryl (I've never heard of anyone on that show except Sharon, so I don't know anything about her) was intentionally deceptive when she kept saying that she doesn't think Sharon is a racist and has never heard he say anything racist, but at the same time, condemned her and basically called her a racist.
My boyfriend asked why she was on and I was telling him about the Meghan/Piers thing and we watched that episode of Good Morning Britain on YouTube before the Bill Maher show. He looked at me and was like "why won't this guy (Alex) just gave a simple yes or no answer, instead of skirting around the issue of did the kid not get to be a prince because he's 1/4 Black? What does how you feel about the truth or how you interpret the truth have anything to do with THE truth?"
Anyway, I still thought the interview was weird. Maybe she just doesn't interview well.

I just watched the full interview. Here are my takeaways:

She is still pissed about what happened and what’s being said about her because she has been muzzled and her responses invalidated. Sharon is 68 years old, she’s been through a lot in her life, and has always been able to speak her mind without consequences. That’s been taken away from her now. It’s got to be a hard pill to swallow and it shows.

It wasn’t her finest interview. She came off angry and bitter but I see why. Media, especially in the US, is changing and she isn’t on board with it so will suffer the consequences.

I agreed with her on a lot of points (I’m not a H&M supporter) but her delivery could have been less emotional. The emotions didn’t deliver well here. But the core of what she said was reasonable. I feel badly for her but she will land on her feet.

If Piers Morgan thinks Megan Markle is lying/manipulating, etc, why is that racial? And why is Sharon Osbourne a racist if she defends Piers Morgan's position that's he's entitled to an opinion? I watched every bit of this unfold in real time and while Sharon Osbourne came off poorly with an emotionally charged defense during her airtime with Sheryl, she actually was blindsided by production and Sheryl (perhaps by proxy). The interview with Bill Maher last night seemed to fluster her, but it was hardly cringe worthy. Jmho...

The display of smugness and false indignation was uncomfortable to me. I cringed.
As far as racism, who knows? I wasn’t there but her two former coworkers said that Sharon used racist and homophobic language.
Also, there was a formal complain to HR from Elaine and a hair stylist as well.
