I completely get why some people would have a hard time understanding how some of us can buy only one brand and be happy. I happen to be a "one brand girl" and sometimes I think it's a little weird, but it makes me so happy, so why not? To answer OP's questions...

How does one get to be this way?
I actually used to have tons of different designer bags... Marc Jacobs, Prada, Donna Karan, D&G, Ferragamo, etc. But I always wanted a Valentino. They were just so freakin pricey! Finally one day I did buy a Valentino (after selling a few of my other bags) and that was it. I pretty much knew I wouldn't go back to another brand. That first bag made me so happy, I can't even describe it. It was everything I was looking for in a bag; function, size, color, and most importantly, it was absolutely beautiful!
What do you like about being this way? What is a challenge?
I like that one brand makes me happy. When I want to look for a new bag, I don't have to narrow down the brand, just choose from the many bags available and made by Valentino. My SAs know that I only want Valentino so when they get something in, they know to call me (especially if it's a return and on sale for a good price!!) It's a challenge because, as some of you may know, about a year ago, Valentino introduced a major shift in their bag style. Studs. It was completely different from anything they had done before and it was like your favorite sports team brought on a rookie player that's the new star. For a long time I resisted, but a few months ago, I decided to give the Rockstud collection a try, and now I LOVE it! I have three rockstud bags and two pairs of shoes.
Is it a discipline, or does it feel effortless to you? Why?
Completely effortless. It doesn't even come close to being a discipline. If it did, I would never do it.
Are you tempted to stray to other brands? Do you give in? Why or why not?
Usually no. For awhile, I was considering trying H and Chanel, but I decided against it in the end. All I kept thinking was "I could get a Valentino bag and a pair of shoes for what I would spend on a new Chanel". So I knew I wasn't ready to switch brands, or branch out. Last month I saw a beautiful D&G at Neiman Marcus. I actually considered it, but again decided against it. In reality, it looked very similar to Valentino style and I realized that was the only reason it caught my eye. Why buy something that looks like the brand I love? Just stick with what feels right
