If someone wanted to purchase a very good quality bag, but didn't want a high end designer name (or price tag) what would you wonderful purse experts recommend? Is there such a thing?

I like good materials, and craftmanship.

Depends on what you mean by "designer", and what your price range is. As for some lesser known/carried brands that I think you get a lot of "bang for your buck" from, I like Gryson, Botkier, just got an Olivia Harris (arrives tomorrow!), Linea Pelle, Cole Haan... they have great quality leathers and bags that are wonderful without breaking the bank. I am always amazing that I can get a buttery leather, suede-lined Gryson on sale for a fraction of the cost of a canvas Gucci.

^ Aren't Grysons starting to run into the $600 - 700 range? I was browsing NM one day and it actually stuck out to me that they WERE quite expensive for what they are...I bought a Gucci canvas bag as a gift for my MIL last September and it was around $650. So I actually thought "wow, Grysons cost the same as some higher end brands now".

Gryson is definately a "DESIGNER" bag, even if they're on sale, its going to cost at least $500. However, the nylon ones are easy to purchase, but i wouldn't recommend the material.

I guess I'm using "designer" interchangeably with "high end": to include both high cost, and also "recognizability" of the name (to a certain extent). Anything with a big "status" name, really: LV over Guess (for example).

I'm looking for a nice big bag to carry for work, and the bigger names would be inappropriate for where I work (as well as too much $$ for just my "work bag".)

I'll look into all the names everyone has suggested so far - keep the suggestions coming!!

I would probably have to say Michael: Michael Kors.
I bought my sister a bag from MMK on my annual shopping venture to New York last year and, well, to make a long story short - it's still alive (and the same colour as it was when I purchased it). It cost around $450USD which, I think, is relatively cheap for a sub-designer label.
If not, there's a great Canadian company by the name of Matt&Nat that has Vegan Leather (a nicer way of saying faux-leather) for the "eco-conscious" or something. I believe you can order them online or, if you're curious enough, look them up on Google and find a location near you! (Matt&Nat bags shouldn't run you more than $200USD~)
That's all I can think of right now. I'm sure there are plenty of 'non-designer' high quality leather bags out there that could satisfy your needs.
I hope your search goes well!

Basically I need a big bag for bringing books, papers and lunch to work (I'm a teacher) every day, I don't mind paying up to 500 or so, for something well made/substantial (books are heavy :)) High fashion and/or fancy brands would be inappropriate, (not that they are in my price range for my working wardrobe.) But I don't want anything that looks cheap either. Coach quality would be perfect, but I would worry that it is too easily recognized as a "brand" all my students are carrying!!
