I wonder if the ring would still look that beautiful if the diamonds were smaller? Maybe the middle stone 1 ct and the side stones .25 ct?

I think it would look great, I would maybe even go smaller on the side stones a little if you want the center to pop out more. A .25 is around 4mm, and a 1ct is around 6.5mm if that helps you for proportions.
