Most of them are very well known in the fine jewelry world, and established and high end. Look around their instagrams and websites to get a feel for what’s going on right now, beyond typical cookie-cutter Cartier/VCA/Tiffany/Bvlgari. Maybe it will help you develop a better sense of what you want—or even open your eyes to a possible new jewelry vibe you hadn’t previously considered.

One complication is that you want white gold, but yellow gold jewelry has been much more widely available in recent years. I have found that if you contact designers directly, some are willing to work with you on special orders for white gold. (I personally am painfully aware of this problem because I only wear white gold and platinum. So I have turned to buying antique jewelry, primarily Art Deco platinum pieces.)

Wow thank you that's a very comprehensive list to look through, and should definitely help me clarify what I like.

White gold is so hard to find nowadays, idk why
 
I think you need to flip your process and start doing some vast google searches to narrow down the look you are going for and then find jewellers from there. It doesn’t sound like a custom made piece is for you.

I am also a fan of the type of necklace you have mentioned with it as part of the chain for lack of a better description (on a far smaller and more simple / modern basis). It, plus my love of the ocean, ultimately lead me to Vargas Goteo in Montreal where I found exactly what I was looking for. Had I started with jewellers, I would still be looking.

I've been googling necklace designs for a while and haven't found anything I absolutely love so I figured I'd change my search to look for different brands or jewelry stores to see if something sparks that love.
ETA I love the ocean and beach, and I love wings/flying birds etc but I don't know if I want that in jewelry.

I had thought for sure I would get a white gold necklace from Graff since I love my pieces from them so much. But since my last visit to them was so disappointing ( along with Hw and Tiffany) I sort of feel unsure of where to look.

Absolutely understand. I had a similar experience. And I certainly didn’t want a turtle or something hanging from my neck on the daily. The one I finally found is very subtle. You’d never know it was mean to be a manta ray unless you knew the story. Added benefit of being a Canadian designer and some funds go to conservation. (And then Meghan Markle had to come along but I digress).

Just for fun here is mine. It sits really beautifully on the collarbone. I have it in silver and am getting it in gold hopefully for my bday!

I might be able to travel to San Francisco at some point, any jewelers there with a good selection of really nice quality necklaces and are honest ? ( just thinking about where I can look if I'm not going the branded jewelry route)
Also any delicious food places ( bakery or restaurant) that I should check out?
