No idea, maybe she just wants to set your expectations? I'm not sure how competitive your store is, but that may be why. In terms of removing the other items from your wishlist, I think that's really up to you. Etoupe and caramel are gorgeous colors, but you're the one who has to spend a chunk of your hard-earned money to have it sit on your arm/in your closet. Being very specific for your first bag will make it harder for the SA because it narrows her options for what she can grab you, especially if it's something very popular like the Gold GHW. So while you could very well end up with your one true love (lol) as your first bag, you just need to be prepared to be patient. Again, it's all up to you.
For me, I knew what size I wanted (B25) but left the color and hardware open (mostly -- I just said that I was looking for any neutral). I took the wonderful advice of the other members on this forum (Check out "Maintaining an H Relationship," which is a very helpful thread) and just bought things I loved across the board, and was kind, friendly, patient and respectful to my SA. Towards the end of my first shopping trip with her, I told her what I was hoping for (I only listed a B25 in neutral color at the time, no other bags or sizes). She did tell me the B25 is very hard to get, but also told me not to worry about it and that it's not impossible. I told her I totally understood and that I'm in no rush. I never pushed her or asked her about it after that, just visited a few times after and, again, purchased things I loved across several categories. About a month after we first met, during our visit, she completely surprised me and said she could offer me a B30 that day, but knowing my lifestyle and how unsure I was about the size, ended up coming back with a box with a B25 instead!
I'm not sure how new you are with your SA, but if you like her and enjoy working with her, I'd say continue developing that relationship as you buy things you love, and the rest should fall into place eventually. Have fun and good luck!!
