My favorite LV bag would have to be the PSM. That's the one I reach for the most. I like the versatility of all the different ways it can be worn.
My favorite LV bag is not Speedy B. But if I can only choose 1, it will be Speedy B in any size. Classic and tick all the boxes I need from an ideal bag. Have zip for security, can be use in many ways (handheld, shoulder, crossbody), can be flatten to save storage, spacious, if you need to organize, you can buy bag organizer which works really well. 
Same as comment above. If I have to choose only one I would go for Speedy B. Being able to carry it 3 ways is the big pro of this bag.
Same for me. I'd choose the Speedy B, but in DE.
For me it's the Artsy Monogram MM. This bag was released in 2010 and it is still loved by many, including me. All these years I never broke down to purchase one, but FINALLY I did a few days ago! 
The braided top handle is gorgeous and iconic. It is a huge bag but over time the canvas and top vachetta handle relaxes and takes the shape of a beautiful hobo silhouette. Over the years I have trained myself to downsize so with this huge bag, it looks empty inside! Lol. Well now I have a reason to start using my full size Gucci wallet with the brass Butterfly and Sorvorski crystals. The pic shows crease lines of where the bag was folded. Why does LV do that when they ship? Smh

If I have to choose just one out of my humble LV collection, it would be speedyB 25 DE. As mentioned above, not my favorite but the most versatile.
PSM for me! Easy to use, fits a lot, can be worn crossbody or backpack and very versatile! Perfect bag
I would have to agree with the others here and say a Speedy B in any size... Classic, chic, yet practical and versatile. There is a reason why everybody and their mother has a Speedy (or a Neverfull for that matter)!
For me at this junction in time. I would pick Pochette Metis, or Plat Sac. I use these two almost exclusively now.
My Neverfull PM DE. Of all the LVs I’ve owned over the years this little one has remained constant.
This is by far my favorite bag I own: the Alma BB in Marine vernis. It’s a perfect size to fit the essentials, and a bit unique, with the vernis mixed with mono. 
It's tempting to say Speedy B, BUT, sometimes that bag drives me crazy because it's like a black hole, my items get jumbled up and I'm digging for things. It works for many situations and holds a lot. It is a great bag ( and yes. I have tried organizers and pouches).
I have 25 or so LV bags. So, after much consideration I'd have to say the Pallas BB. It's small but not too small. It has magnetic side pockets for easy access items. Treated leather trim. Similar to a speedy b but flatter with soft squishy canvas that molds to the body when carried. All gold hardware matches. Has feet! Removable strap so you can change it out or hand carry. Has soft microfiber lining. It's about as perfect and as easy to use bag that I own.
