AFAIK, the Evelyne is machine stitched, not hand stitched like the higher priced bags (K, B, Constance, etc). I could be wrong. I use the price as a guide to clue in on which bags require more manual labor.

No, the Evelyne is machine stitched. Look at the stitching on the bag. They look completely different to the hand stitching on the birkin and Kelly. I know this because when I went round the museum in Paris they were explaining how the bags are made today, compared to years ago and which ones are still handmade today
 
I believe what Ms Birkin said. Handmade stitching can make leather tearing apart more visibile between each stitch because the tools and the strength they use by hands. Machine moves faster and tool is sharper than the handmake one so the leather looks more perfect condition. Look at the inside Birkin, you will see the leather looks like broken between each stitch.
 
So does that mean most of the small leather goods are not hand made?!??!

I had a few interesting chats with a couple of artisans in the past. They were really happy to explain a lot of things in details. From memory (which is pretty awful these days!), Birkins and Kelly bags are handmade. They still need do reinforce with a few hand saddle stitches etc but by and large, the rest are mostly machine stitched. The strap on a Kelly is machine stitched but the edges are sanded down by hand. One told me that the handle of a Kelly is the hardest thing to make. It easily takes up to 4 hours or so.
 
I have seen Claire (artisan based in london) prepare the individual leather pieces to stitch a jypsiere. She then stitched the jypisere in front of customers in selfridges london a week later.

I believe H did this in singapore and other countries too as their contemporary artisan theme last year. An artisan stitched a jypsiere and there were showing how scarves were printed..
