I'm leaning towards a no ... I bought a wine red lambskin Chanel years ago which was touched up, but the hand feel was very different as compared to those that haven't been touched up, i.e. not as soft. It depends on how the touch up was done and whether only a small area (like the corners), or more substantial than that. I think for a purchase like Hermes, I'd prefer to leave no grey area behind, if you know what I mean  Hope it helps.
Your Chanel was redyed, which was done for a reason. i have had two Chanel purses that had to be redyed. One was black lamb that had faded from daily use over years. It looked so beautiful when the SA returned it. I mean breathtaking gorgeoua. The other, a rare Valentine heart chain bag. Yes the hand will feel not quite as smooth, but I don’t have people running their hand on my purses either. It is part of purse ownership sometimes. Oh, the Valentine was a rescue that sorely needed the tlc.
