I have an amethyst cabeshon set in rose gold with diamonds. I really like the combination.
A richly colored amethyst would be beautiful in rose or high karat yellow gold. Tourmaline can be nice in rose gold. I've also seen emerald done with rose gold. There are a lot of spinel colors too and spinel is fairly durable so that might be easy to explore.

African amethyst which is a deep purple with red flashes, looks great in RG/YG.
Alexandrite is good. A really rare stone and it color changes. Thats by birthstone aside from pearl.
Blue sapphire is ok...i think theres a purple sapphire if you like. I know amethyst is pretty but sapphire is sturdier with a moh score closer to diamond. Which means it can be used everyday. Morganite is gorgeous but its not an everday stone either.
