OK; I always seem to be the one with an odd opinion (albeit unintentional), but here goes . . .
First of all, you have long slender fingers like mine (though my hands look much older), and will actually look better with a wide set of rings.
Secondly, you did well to choose the bezel set diamond/sapphire stones; esp if you're going to be wearing it alone at times. No prongs mean no snagging.
With the cross-over e-ring, I'm thinking that putting a second (identical) band on top of your e-ring, as well as the bottom, will balance out the geometry. A woman with an "average hand" would not be able to pull this off. Lucky you! And when you choose not to wear your e-ring, you can wear the two eternity rings, stacked together.
Another alternative (which is also a compromise to some of the other ideas here) is to go ahead and get the eternity band (it really is a lovely design!) AND a plain wide wedding band. You can wear the plain band with the eternity band on your left hand, with the e-ring on your right hand . . . OR just the plain band on your left hand for those times you might not want to wear any gems at all.
In the end, it's pretty much a matter personal choice & with your hands, you can be as eclectic as you want. I think you'll end up with a lovely set no matter how you wear them.
