Personally, I would buy a diamond solitare. You can definately go the Diamond by the Yard route or a classic prong set stone. It could be worn for all occasions.

I also agree Roberto Coin pieces are gorgeous, DH got me one for Christmas & I love it, it's not the Tiny Treasures I'm not sure what it's called but I love it.
Tiffanys and I've found alot of things on Ross Simons website that are now on my wishlist as well. 
If I were starting out with no necklaces, I would first start with a DBTY necklace, either one or several diamonds. Brian Gavin Diamonds has (what look like) very nice versions of the DBTY, but I haven't ever purchased from them.
Or, if I were going on the no-diamond route, I would get a simple, 18kt gold Jennifer Meyer necklace. Jamie Wolf (at Barneys NY) also has nice, 18kt dainty necklaces on well-made chains.
The Cartier Trinity would also be a great every day necklace, and is pretty classically recognizable.

I also think a DBTY necklace would be beautiful. I wear a cross that my grandfather gave my grandmother on their wedding day. I think its all about you personal style... you said you were fairly simple so I would check out Tiffany. They have a lot of simple, "clean" styles that would be great options for everyday.
