If I said I liked saturated, cool-toned not super bright colors, which Hermes colors would you recommend for me?

These are all very much up my alley, thank you! It's very interesting that you'd rec blue saphir in togo, specifically, as that's one leather type I'd like to add to my collection as well. And I just had a quick google and the color really looks stunning in that leather.
I love bleu safir but in some leather it’s very bright. In togo it’s not purple like bleu encre, not as true dark navy as bleu nuit or bleu indigo but still wearable with almost anything. I can send you a picture if you want but it may not capture the uniqueness and versatility because photos don’t do it justice. In Togo it is my favourite blue and I have several blues from Hermes. I like really classic colours if that helps for reference.
 
Sorry, I'm sure I'm not using the correct terminology re: dyes and whatnot. I suppose I mean colors that look rich or vivid. But not neon...or "loud". Lime, for example, screams at me. So do many Hermes pinks, like Rose shocking. They are too bright for my tastes. Vert Amande is, admittedly, a bit of an outlier in my collection because it is more muted than the others that I prefer. But I enjoy its chameleon nature.

I which case I might know what you mean. I like the same colors that I call “saturated” too.
How about Vert Jade, Blue Paon?

You’re totally speaking my language because i LOVE cool toned colors.. however, these are on the lighter side but i think would be nice to diversify your current collection.

My goodness, these are divine. Not entirely sure about Rouge H for my particular wardrobe - I think it would depend on the bag/leather. Some seem to look very brown while others are more burgundy/purple-ish?

Yes rouge H is very variable. Can vary from almost brown to a nice deep red. So you have to look at the specific bag and then decide.
