I always think of Etoupe as Taupe-a kind of muddy beige and although a neutral I dont personally like it.
I like (some discontinued sadly) Plomb, Gris Mouette,Vert Gris and Graphite and those would be my choices for a Grey bag

+1 on the Plomb, it was such a nice grey, a bit lighter than Graphite. I luckily got my first Birkin in Plomb. My forever bag

Hermès greys are truly my favorite.. I own Etain, Graphite, Gris Meyer, Gris Asphalt and Etoupe. I agree with others in that Etoupe (as much as I love it) is definitely more on the brown/taupe side of the spectrum, my favorite grey of all time would have to be Etain. I have it in a Birkin (Togo) and Kelly (Clemence), and would not mind having another bag in Etain if given the chance! It is the perfect neutral for me :)
