I think some of it is that to play on this level for so many years, one must be extremely competitive, which makes it extraordinarily difficult to know when to walk away. Even God (Joe Montana) struggled with ending his career - as did Brett Farve, Michael Jordan and many others that I can't think of off the top of my head.
I agree that he likely still has a couple of good playing years ahead.
Not to mention that his childhood idol was Joe Montana, who Brady still thinks was the best ever. As berrydiva said, the chance to beat Joe's Super Bowl rings could be awfully tempting as a goal.
