Yes to Gris Perle, but I have only seen it in Togo this year. No to the other two. Depending on what bag and leather you want, I would also recommend Gris Pâle or even Béton.
Étain is certainly still available this year for quotas. It might just be that your store did not order much.
I was offered a Gris Perle Constance very recently but it was by WeChat and I didn't see it. I could have sworn they said chèvre but it's not uncommon for SAs to know a bag is coming but get the leather wrong. Either way, GP still out there.
The Trench + Bougainvillier Togo Verso may still be around since it was a 2022 release. The Biscuit Swift might be harder to find. Biscuit Swift is an old combo, but in recent years, it has mostly been used for smaller bags and limited edition collections (i.e. In-and-Out, toile bags, etc.). It still would be worth inquiring with your SA, because every boutique orders different stock.
Yes, Chai is still available. It has mainly come in Clemence, Epsom, and Swift this year. You may be able to find some Togo, Veau Madame, and Matte Gator bags around too, depending on what style you’re after. Quebracho is also available, but only for a few styles and only in Chèvre, of course.
Écorce is an older colour from the mid-2010s. It mostly came in Togo. It has made a reappearance recently on a few versions of tricolour Mini Kelly II in Epsom leather. Yes, it is pretty rare, in my opinion.
