How about the camera bag? I have both the bag you are mentioning and a camera bag and I can fit way much more in the camera bag.
Hi LolaLemon, I have these two camera bags, but there are plenty of other variations in all leather and different colors.... I took a picture of what I can fit inside-which is basically everything that I carry in my regular Rogue too, so the camera bag is pretty roomy (not pictured, but also fits: my phone and my bulky keys). When I carry less or want something more elegant, I carry the Riley crossbody, but that one is less roomy.
I guess you could fit a small 0.25l bottle in there or you could leave the zipper open on one end and have a slim 0.5l bottle lie diagonally in the bag. Personally I don’t like doing that...
If you are ok with used/vintage Coach one of the Kristin hobos might work. I don't have one but was recommended to me when I was looking for a similar bag. Perhaps a Madison Sadie might work, too. The current Kelsey (MFF)/ Prarie satchel might work, too. The chaise or Mae (MFF) crossbodies might work for you, too. They are pebble leather. I don't own any of these but just based on when I've seen them in person they might work.
I ended up not being able to find a Coach bag I liked that was big enough and not too heavy. My legacy Willis came closest size wise but was still slightly too small. I don't like thick/satchel bags as crossbodies so that eliminates a lot of options for me.
I ended up getting this not leather bag from Macy's (I.N.C. Bangle crossbody) and so far I love it (it comes with a crossbody strap that attaches to the sides of the bag). It has three external zip pockets (phone can fit in any of them), one internal zip and two internal slip pockets.
Nalgene makes a 500ml rectangular water bottle I highly recommend if you are ok with plastic as it fits in many of my bags where a regular water bottle would not.
I also recommend Fossil's Ryder satchel. It can be worn crossbody, shoulder, or hand and has tons of pockets and fits a lot. All leather and super pretty. Comes in lots of colors and designs. I bought one as a gift for someone and now I might want one too! It's definitely thick and more structured than you requested, but it works for me as a shoulder bag. It also comes in a mini size.

Maybe the Emma or Mini Emma? They're made for factory styles, but they're really Iightweight and they come in lots of different colors.
