That’s what I thought, so I double checked and my SA mentioned it’s grained calfskin (which I think is the formal name for caviar?).
Reissues typically come in aged calfskin. I have two in 226 size and they are very durable.
Yes, I like my aged calf but would love a reissue in caviar (or sheep or goatskin)! The caviar reissue came out a couple of years ago and I think the reverse chevron in sheepskin was more recent (still couple of years ago).

If you're interested in what's currently-available, I visited two boutiques recently and also called the online SA. Three colors currently available - dark navy, rouge, and pink-like color (this I heard from the online SA and did not see in person). All seem to be previous collections.
