IMO, if a fellow H customer or SA says "what a beautiful bag!" inside and Hermes store, it's a compliment in a safe space, same at a function where there are friends of friends.

Stranger encounters have to be managed these days, this is just reality. This is a time of heightened danger of theft or other abuse committed on the street, even in trafficked and pricey environments. Discretion is almost always the better path. As in, mind your boundaries.
MY DH loves cars, so here's what I'd say (and have said) when I see a guy with a great car: "My husband loves cars, I know he'd love THAT, it's really nice!" That way, it's a compliment and he knows I'm married and just want to say he has a nice car. Just do the reverse about a bag.

And for others who have mentioned it. Cultural context is indeed important. I'm in the South, so it's not as weird when people talk to you in public as it may be in other places in the US.
