Best leather for rain, work, travel and general longevity?

I‘m looking to buy my first Birkin, a 30 or 35 mostly for taking it to work (lawyer) or shopping.

I have a Kelly 28 in black box leather and now I would like something different, perhaps Togo? I don‘t want to baby the bag, it shouldn‘t be too shiny or heavy and in the middle between structured and losing its form when empty. Most of all I want to be able to grab it and go before checking the weather report.
