Super-old thread but I wanted to bump because I got a pair of silver knot earrings last month, and last night I noticed too that the center hole is differently sized. It looks like the silver is structured as a mesh - four parallel wires bent together. Maybe they are handmade? And that would explain why there can be some variation.
