Food Simple Salad Dressing Recipe?

I'm looking for a fairly simple, light yet bright tasting dressing to make for an arugula salad.

I have several pinned on Pinterest, but don't really have a ton of time for trial and error this afternoon.

Does anyone have one they always go back to and would want to part with the recipe? TIA!

honesty, for peppery arugula I like a simple dressing of olive oil and balsamic vinegar. The sweet of the balsamic pairs nicely.

Yes, I was just going to say add a dollop of dijon mustard to the vinaigrette! It's very good with walnut oil and balsamic vinegar.

also, some grated parm cheese mixed in w/salad dressing gives it a little extra kick

This! Add some really good quality balsamic vinegar and no need for anything else.

I tried the parm mixed in as well as one with spicy mustard. Both were delicious! I don't think my balsamic is high quality enough to stand alone - it's the Trader Joe's brand.

Try FINI.. its a little bit more expensive but rather delicious & great when
warmed up to serve on fruit or ice cream..

2 tablespoons good olive oil & 1 tablespoon white balsamic vinegar. Stir with a fork to combine. Pour over your salad and toss

My go to salad dressing is 1/4 cup good extra virgin olive oil, just under 1/4 cup red wine vinegar or apple cider vinegar (I switch them up), 1/4 tsp. sea salt, freshly ground black pepper to taste, 1 Tablespoon honey, 2 cloves crushed garlic and a squeeze of fresh lemon juice all whipped together with a fork.
