Food what's your fav macaroni salad recipe.....

i love it with a bit of mayo, sweet relish, grated carrots, chopped onion, salt & pepper. you can add chopped bell pepper, jalapenos, etc. simple and easy :smile:

Ruby Tuesday's Pasta Salad
--------------------------------------------------------------------------------

Salad:
8 ounces macaroni, cooked and drained
8 ounces ham, 1/4" cubed, about 2 cups
8 ounces sharp cheddar cheese, 1/4" cubed
1 (10-ounce) package frozen peas, cooked and drained
Dressing:
3/4 cup sour cream
3/4 cup mayonnaise (not salad dressing)
1/4 cup lemon juice
1/2 cup grated parmesan or Romano cheese
2 teaspoons dried tarragon
1/2 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

In a large bowl combine salad ingredients.

In a smaller bowl, mix dressing ingredients. Pour dressing over
macaroni mix and toss to blend well. Cover and refrigerate several
hours or overnight.

Remove from refrigerator 30 minutes before serving. (More
mayonnaise or sour cream may be needed.)

^^Yes always have extra mayo and sc on hand to moisten it up the next day
And I don't cook the peas - I just put them in frozen

Here's my Grandpa's yummy recipe:

Potato Macaroni Salad
1 lb. elbow macaroni
4 medium salad potatoes, boiled and cubed
1/4th of a medium round onion, chopped fine
1/2 of a carrot, grated
1 box frozen peas
2 sweet pickles, chopped fine
4 hard boiled eggs
1 quart Best Food mayonnaise
1/4 tsp. prepared mustard
1 1/2 tsp. pickle juice
1 can king crab (weed through to take out any shells or cartilage)
salt and pepper to taste

Cook macaroni according to package instructions and let cool for 30 minutes. Mix together all ingredients; chill and serve.
 
some of my relatives make a really yummy 'dessert' type of macaroni salad. i don't exactly know how it's made but it's with macaroni noodles and also has grapes in it with a sweeter type of dressing.
 
These recipes sound delicious!
I usually make my pasta salad with penne, though, instead of macaroni, and just everything I have laying around the house. Usually something like tuna/olives/sundried tomato's/mozzarella/green peppers, or ham/cheese/maize/peas/tomato's. And I like making a dressing out of some fatfree yoghurt, Calvé saladsauce and some italian herbs and brushetta. But out of mustard and mayo sounds good too, I might try that next time!
