Pizza Rice!
I adjusted this recipe from one I saw on a tomato can...It's really fast to make, and really good. I'm sure you could add mushrooms, black olives or...anchovies (just kidding!! LOL!), etc. if you like, too.
10-12 oz. hot Italian sausage, removed from casings (I use turkey sausage)
1/3 cup chopped green pepper
1 small onion, chopped
About 3/4 of a 14.5 oz. can diced tomatoes (I used fire roasted)
2 small 5.5 oz. cans vegetable juice (I use low sodium V-8 to cut back on the salt)
1 cup instant white rice
3/4 cup shredded mozzarella cheese
In large skillet, cook sausage 4-6 minutes. Drain excess fat. Add green pepper and onion, cook until veggies are tender crisp. Add diced tomatoes and vegetable juice, cook and stir until mixture boils. Remove from heat, stir in rice, cover, and let stand 6-8 minutes or until liquid is absorbed. Sprinkle with cheese, cover, put under very low heat until cheese is melted.
Makes about 3-4 servings, depending on your appetite!
