I've been seeing a lot of thicker gold chains lately on fashion sites/celebs - do you think they're trendy (maybe better to buy a lower priced version, wear for a bit for fun), or classic staple (splurge on an expensive 18k version)?

I agree that it’s both. Chains are super trendy right now, but also classic enough that most chain styles won’t become passé when the look is not as popular as it is currently. Tiffany hardwear chains are my favorite!
 
A thick chain is classic ( omega, herringbone etc ) , but the HUGE link chains that look like they can be used to tow something, those are cute but trendy IMHO.
 
Classic but also very trendy right now. My mother recently gave me one that my grandmother bought in the ‘90s and it looks as if it could have been bought now. I love the look and am thinking of adding another longer one. I really love the chain on the second picture you posted!
