The Noe - have they ever made it in Empreinte leather?

The Noe design seems to beg for smooshy leather, doesn't it? Has LV ever released it in Empreinte (or some other soft leather)?

Not in Empreinte leather. It exists in Taurillon in the Haute Maroquinerie collection.
