What do you exactly mean with the stamping? Their canvas or the date codes?
Regarding the paint. The older bags (pre 2006) have hand painted canvas, so the dots vary in size and are all different. Bags after 2006 are produced with canvas that is painted using stencils which makes the canvas look much more consistent.
